Shredded Sprout Salad

Ingredients

This is a really good way to jazz up your sprouts and is especially good if you are craving a bit of crunch and zing. I love to make this on boxing day to enjoy alongside baked potatoes. Any leftovers will keep for a few days and can be tossed into other salads.

  • 600g Brussel Sprouts

  • Olive oil

  • Salt and pepper

  • 2 tbsp Sesame oil

  • 2 tbsp Maple syrup

  • 1 tbsp rice wine vinegar

  • Juice of one lime

  • Thumb sized piece of ginger, peeled and finely grated

  • ½ garlic clove grated

     

  • 3 tbs white sesame seeds

  • 2 tbs black sesame seeds

  • ½ birds eye chilli, finely sliced

Method

  • Start by removing the outer sprout leaves, then chop off the bottom of the Brussel sprout stems. Finely slice the sprouts and place them into a bowl with olive oil, salt and pepper, give them a good massage until tender.

  • Mix together the dressing ingredients and sprinkle over the sesame seeds to serve.
