Fluffy Banana Pancakes with Caramelised Banana

A very good recipe for the weekend, these banana pancakes always go down with great success. Sub for gluten-free flour if you like. I have tested them this way and the result is equally delicious.

Ingredients

| Makes 6 pancakes |

  • 250ml oat milk

  • 1 tsp lemon juice

  • 1 egg

  • 1 tbsp melted butter, cooled slightly (or veg oil)

  • 1 tsp vanilla extract

  • 1 tbsp maple syrup

  • 1 small ripe banana, mashed

  • 150g plain flour

  • 1/2 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • Pinch of salt

    For the caramelised banana

  • 1 banana, sliced or halved

  • 1 tbsp granulated sugar

  • 1 tsp butter

Method

  • Whisk the oat milk, lemon juice, egg, melted butter, vanilla, maple syrup, and mashed banana in a bowl.

  • In a separate bowl, whisk the dry ingredients.

  • Pour the dry ingredients into the wet and mix just until incorporated. Let the batter rest for about 5 minutes.

  • Heat a non-stick pan to medium heat. Melt a little butter and using a ladle, spoon about 2tbsp of batter into the frying pan. Cook for about 1-2 mins or until bubbles appear, then flip and cook for 1 more minute.

  • Keep warm whilst you make the caramelised banana.

  • Coat the sliced banana in the sugar. Melt the butter in a pan, add the banana and cook for about 4 mins on either side until caramelised. Serve the banana pancakes with maple syrup, caramelised bananas, and yogurt if you like.
