Giant chocolate chunk cookies

Chocolate chip cookies are great but giant chocolate chip cookies are better or at least bigger. I made these for my #diningindishes IGTV series during lockdown and they went down a treat. 

INGREDIENTS

  • 250g plain flour

  • 1 tsp bicarbonate of soda

  • 1/2 tsp salt

  • 170g soft butter

  • 150g light brown soft sugar

  • 100g white granulated sugar

  • 1 large egg

  • 1 large egg yolk

  • 1 tsp vanilla extract

  • 250g chopped dark chocolate

METHOD

  • 
Preheat your oven to 180 degrees fan and line 3 trays with baking parchment (or I love reusable silicone baking mats).

  • In a medium sized bowl whisk together the flour, bicarbonate of soda and salt.

  • In a separate large bowl beat together the butter with the sugars until light and creamy.

  • Add the egg and egg yolk and the vanilla extract and beat again until combined.

  • Add the flours and stir to combine with a wooden spoon adding the chopped chocolate about half way through.

  • Divide the mix into 6 balls and shape and press 2 each onto the trays placing them at least 5 inches apart.

  • Bake for 20- 25 mins until the cookies have gone golden in colour. They will still be soft in the centre but allow them to cool completely.
