Sesame, Ginger and Peanut Slaw

A crunchy, zingy and nutty slaw that certainly hits the spot if you’re after something fresh. I love to serve this alongside any main and often have it as the star of the show for a midweek lunch.

Ingredients

| Serves 2-4 (as a main or a side) |

  • 100g red cabbage, finely chopped

  • 100g white cabbage, finely chopped

  • 150 carrot, grated

  • 40g toasted sesame seeds

  • 40g roughly chopped peanuts

 

For the dressing

  • 2 tbsp Tamari or soy sauce

  • 2 tbsp Toasted sesame oil

  • 1 tbsp Mirin or honey

  • 1 tbsp apple cider vinegar

  • juice of 1/2 a Lime

  • one garlic clove, crushed

  • Matchbox size ginger grated

 

Method

  • Combine the dry ingredients in a large bowl.

  • Mix the dressing ingredients together with a fork and pour over.

  • Toss everything together using your hands and serve.
