Sesame harissa roast carrots with tahini
Bright in colour and bold in flavour this dish is a sure way to bring a smile to the table. The key is to invest in quality harissa and tahini. I like Belazu who take incredible care in sourcing the best of the best. This is delicious slightly warm or cool and makes for wonderful leftovers too.
Preheat your oven to 250°C/fan oven.
Wash you carrots and slice them in half lengthways and arrange onto two roasting trays.
Combine the harissa, honey, sesame seeds, olive oil, cider vinegar and sea salt in a mixing bowl. Pour it over your carrots and massage to coat using your hands.
Roast for 30 mins until cooked and slightly charred.
Arrange onto a serving tray and drizzle with tahini to finish.
